One of my favorite side dishes or easy appetizers is fragrant, crispy grilled artichokes. I love artichokes, as they are so rich in nutrients—fiber, as well as protein, vitamins C and K, folate, and phytochemicals. Not to mention that grilled artichokes are so simple, earthy, and delicious. Even my kids love them! Especially when I marinate them in a garlic-herb vinaigrette and grill them outdoors. When are artichokes in season? March through May is the perfect time to find fresh artichokes, and I grow them in the garden each spring, too. It’s so easy to make this recipe for grilled artichokes. Fresh artichokes are available in the farmers market or supermarket. You can even grow them in some parts of the U.S., such as California.
How to Grill Artichokes
Wash artichokes and trim the tops and stem. Then split in half.
Using a metal spoon, scoop out the flower portion of the artichokes in the center.
Boil the artichokes for 10 minutes in hot water, until almost tender.
Place artichokes in a dish, cut side up.
Make a marinade or vinaigrette (such as the one featured here) and drizzle over the artichokes.
Marinate for at least 30 minutes.
Grill the artichokes on a hot grill, first with outside facing the heat for a few minutes, and then turn them over and grill for an additional 5 minutes, until golden brown. Enjoy!
